Thinking of the Holidays


The weather has been playing games on us here in the Midwest jumping back and forth from hot muggy weather to down right cold and nasty weather. The cold just reminds me that the holidays are coming up way faster than I want to think about. After Halloween, Thanksgiving will be here before I know it and then Christmas sneaks up on me before I have a chance to get ready. I am trying to force myself to think about it early this year and start thinking now about gifts and making sure that family traditions are preserved and celebrated during this busy time of the year. Last year we didn’t get to bake our Christmas cookies and this year I am planning to make a little family get together out of it. It is funny how many of my family members ask for tea for Christmas presents. I tend to discount it because I am surrounded by it almost every day. Hot Toddy Recipe with Brandy & Winter Peppermint Tea


This weeks warm up was kinda nice after that nasty wet cold week we had. I would have been fine with the cool wet weather had I not had to sit out in it and watch my daughters marching band. Those poor kids marched in pouring rain in chilling temperatures and still managed to get top scores. I made her day by bringing her a piping hot mug of our Sleepy Hollow Pumpkin Chai. I personally was dying to get home and make a myself a hot toddy with our one of our new teas instead of just water. Well I could not make just one because my husband would disown me if I didn’t make him one also. Hot Toddy
1 ounce Brandy or Whiskey
1 tbsp honey
6 ounces hot tea
3 whole cloves
1 cinnamon stick
pinch of nutmeg
slice of lemon

Brew up your tea of choice. Stir together your your tea, honey, spices and brandy or whiskey. Let the flavors sit and meld for 5 minutes before you add your lemon slice and serve.

Greetings Fellow Tea Lovers,

We have about 3 weeks until the official start to the Autumn season and I am looking forward to the cool, wet weather and absolutely decedent flavors and aromas. As the crops are harvested and the trees colors bloom the air is filled with the earthy rich smells of fallen leaves and ripe apples, wood smoke. Sitting out on my porch with a hot cup of tea or mulled cider in my hands enjoying the cool breezes and just breathing in the those heavenly aromas. I use large quantities of Mulling Spice all year long because I use them in my favorite brine to add flavor and moisture to poultry and pork but this time of year I keep a slow cooker filled with spiced apple cider. My guests head for the cider as soon as they take off their jackets and praise me like it difficult to throw cider, mulling spices, a bit of brown sugar and sometimes a shot of rum into the slow cooker. My favorite tea during the most beautiful weeks of Autumn before that the cold pushes in is Lapsang Souchong. Lapsang is a whole leaf black tea that is oak smoked which makes it very aromatic and surprisingly mild on the palate when brewed. I love watching peoples faces as they take their first sip of this tea because the smell makes you think the flavor will be harsh and smoky but the smokiness only remains in the aroma and the flavor is a wonderfully rich flavor with only slight hints of smoke. Even my daughter which calls this tea beef jerky tea because of the smell of the dry leaves thought that it was delicious when I brewed her a cup but it took quite a bit of cajoling to get her to take that first sip. Getting Ready for Fall and Irish Breakfast Teas

Raspberry Rooibos and a Coupon

The weather this spring has been pretty icky for us humans but I have to say that my fruit plants look like they have never been happier. My property is a mini farm. I have grapes, blueberries, cherries, apples, peaches, apricots, strawberries and rhubarb. I must admit we have put a little extra effort into all of them this year but they have never been half this abundant in past years. I think they enjoyed all the rain and mild weather which made is so miserable for the rest of us. One fruit I did not mention because it just grows wild and I have little control over how well it does is raspberries. Along the wooded edge of my property is just thick with raspberry plants and some years they are full with luscious berries and some years the berries dry up before they ripen. Raspberries are one of my favorites but not my favorites to pick because of the brambles. Memorial Day Weekend and Pineapple Tea

Memorial Day weekend is here again and I always have to have a party. It usually involves lots of food, drinks and friends. I usually load up the smoker and make magic from some type of meat but the current weather has me wondering if I should make a backup plan so we don’t all go hungry. Oh sure I make sides and desserts but the meat is always the main event. Well sometimes the drinks are the wind beneath the meats wings and this year will be no different as we tap our first keg of homemade beer. Beer you say? I bet you thought I was only good at blending and flavoring teas. I actually have many hobbies that I am very good at including being a musician, chef, fisher, gardener and most recently beer crafter. The one thing people always count on at my party beside the excellent food is lots and lots of delicious iced tea. My tea selections are always a topic of conversation and I usually have to send a few ounces home with guests who now have a new favorite tea. Blue Mango Green Tea and Cold Brew Teabags

Last week I realized that the last few weeks of school for the kids is a gauntlet for me. For some reason the 
schools schedule 50% off all the events for the entire school year in the last 3 weeks of school. Those events plus my eldest is in track and softball means I get to make at one maybe two trips each night if I am lucky. It feels like I am on the go constantly. We are based in Indiana and once the heat finally kicks in around here it will be paired with horrible humidity. I am rarely seen in the warm months without a bottle of water or tea in my hand. Last year I just added a scoop of Matcha to my water bottles but this year I have something better. One of our Japanese vendors introduced Cold Brew Green Tea Teabags and after trying them, I fell in love. Bad Water and Long Island Strawberry Sencha Green Tea


 I was reminded again this week how important good water is to good tea. I have a triple osmosis filter in my house so my water is usually great for tea or just drinking pure. This weekend one of filters decided it was time to die and the system is putting out like a cup of water per hour and the flavor of the water has gone off. All the little faults in your water will have a huge impact on the flavor of the tea. II must admit that the off tasting filtered water is still better than the unfiltered water but as soon as my replacement filters arrive today my husband is going to get the orders to put them in immediately. I am craving a good cup of tea so bad and when I try to make it with this water I can still taste that off-ness and it seems to stale the flavor of the tea. There is just no way around it bad water makes bad tea so if you don’t enjoy drinking your water fresh from the tap then I don’t suggest you make your tea from it. If you have any doubts about the quality of your water than you should get some good bottled water and do a test brew of your favorite teas and see if you notice a difference.

This week I need to work on transplanting my runaway strawberries into a new row. If you have grown strawberries than you know they are almost as invasive as mint. Strawberries put out runners that start new little plants and they can quickly overtake any other vegetation including weeds. My currant strawberry bed consists of two rows that are 50 feet long and about 3 feet wide and they have almost over taken the row in between them. All of those plants came from 3 plants I planted 10 years ago. Those plants grow some of the sweetest most flavorful strawberries I have ever tasted and they always make me thirsty for our Long Island Strawberry Sencha Green Tea. Kokeicha: Something Different In Green Tea


There are very few really unique teas. Pu-erh is unique because it gets better with age instead of staling like other teas. Matcha is unique because the tea leaves are ground into a fine powder that is brewed by simply adding water. Our featured tea this week is another unique tea, Kokeicha.Kokeicha is an extruded tea made from Matcha and a bit of rice flour which binds it and adds just a hint of extra sweetness to the brew. This tea also does not brew like other green teas. You can either brew Kokeicha with boiling water for 1 minute or 180 F degrees for 3 minutes. The brew has a delicate aroma with a hint of spinach and the flavor is smooth and complex with hints of minerals and leafy greens with a sweet and slightly mineral finish. The unbrewed tea makes a crunchy addition to rices, salads or ground and used to season seafood. Tea Garden Herbs, New Teapots and Vienna Opera Ball Tea


I anxiously await the coming of the spring flower because we have had so much rain that the flowers when they finally come in May it should be quite a show. The delayed spring has given me plenty of time to get all my gardens cleaned out and do a little extra planning for my herb garden. I try to pack in as many culinary herbs as I can that not only are good for cooking but make delicious additions to my summer iced teas. I usually don’t make teas out of just herbs instead I throw them in my green or black iced tea to add extra flavor. Some of my favorites are lemon balm or lemon verbena and the many variations of mint like chocolate mint, and sages. Last year I found a pineapple sage and it was an incredible addition to tropical fruit teas. Next time you go to the Nursery to find some new plants smell them, maybe give them a little taste and think about how wonderful they would be in your tea. 


New Products
This week we introduced our new ceramic teapots with fitted stainless steel filters, Grimaldi 2 cup and San Remo 6 cup. These teapots are made so that the top of the teapot can be on while the filter is in the teapot and the filter has a very fine mesh which will let you brew even rooibos without debris in the bottom of your teacup. Celebrating 10 Years And The Sakura Festival



It is Sakura Festival time which is one of the most beautiful times of the year. Sakura or Cherry Blossoms are one of the very first trees to flower and have such an abundance of flowers that the trees often look like they have tiny pink leaves on them. Even the fall leaves can’t compare with such a beautiful sight. We have carried our Sencha Kyoto Cherry Rose Festival tea which celebrates the Sakura festival in Kyoto for quite a long time. Rooibos & Spring Break Sun


Spring Break has arrived and warmer temps should be following so this is this is the time when tea drinking habits change from just hot to tea to mostly iced tea. In the united states 80% of all the tea we drink is drank as iced tea. Some teas are more than just good to drink they are also useful. So many of you returning from Florida will have painful sunburns to deal with and in your tea cupboard is one of the best things to take the sting out. The first thing to use if you have it is aloe vera and Jewelweed but if you don’t have it brew up a batch of iced rooibos and wet a towel with it and lay it across the affected area. Rooibos works to reduce the swelling with reduces the pain. I have heard the tannins in black tea can also help but I have never seen the same results I get from Rooibos. Rooibos also works well for migraines, sore throat and acid reflux. I personally enjoy it most just as a beverage but it is good to know that I am also doing something good for myself.

Tea Production Struggles, New Rooibos And Bigger Sizes

It seems like our tea supplies are under attack all over the world. The tea estates in Shizuoka Japan are readying them selves for their spring harvest and they are having to battle with power outages and food shortages. Luckily the radioactivity is far enough away to not have to worry about but it certainly will have an impact as most of the Japanese production relies on electricity to run the machines used to pick, form and steam the tea. While this is going on in Japan all tea exports from Darjeeling, India has been stopped due to a labor dispute. The first flush harvest is underway but its production progress will certainly be impacted as well as its chance to be exported. Luckily none of this will impact our tea supplies for at least a year on most of our teas but there are some teas that we move in such high quantity like matcha that might possibly start having shortages. I hope we don’t have to worry about those issues I am much more worried about the plight the Japanese people are having to endure.

Matcha Something Old Is New Again



I am sure by now you have heard all the news about how good for you green tea and how it can do everything from keep your heart healthy to helping to prevent or fight cancers. I know a lot of people who really want to increase how much green tea they consume each day to the suggested 10 cups of tea per day. With today's busy life styles it can make it very hard to have time to drink those 10 cups of tea. I suggest using Matcha as an easy way to sneak more green tea into your diet. Matcha is finely ground green tea that lets you consume the entire tea leaf therefore helping you to digest more of the polyphenols(antioxidants) and other beneficial parts of the tea. Matcha is so conveinent that you can add a quarter teaspoon to your regular cup of tea to double the amount of green tea your consuming per cup. It is also versatile and can be added to everything from your morning yogurt or smoothie to the brownies you made for dessert. A quarter teaspoon of matcha is the equivalent of a normal cup of green tea. Matcha is not any higher in caffeine than normal green tea but you may find that you have much more energy when consuming it and this is from the poly-phenols and other anti-oxidants that you would normally not get in such high quantities from simply drinking green tea.

The people who grow and process tea have been looking for ways to change and improve their teas and it has brought us some new and unique teas. The newest tea that I have been introduced to is Kenyan White Rhino Matcha. What is a white Matcha? White Matcha is basically white tea leaves that are ground to the fine matcha consistency. White teas have been shown to have more anti-oxidants than green teas mostly due to the fact that the leaves are simply dand do not go through the heating process or either steaming or frying. This specific new matcha also has more anti-oxidants because it is grown at much higher elevations than those grown in Japan. White Rhino Matcha has been shown to have almost double the amount of polyphenols than that found in normal types of matcha. Beyond the health benefits the White Rhino has a milder slightly toasted flavor that pairs well with almost any applications.

With so many healthy benefits I hope you will try Matcha to add a healthy punch to everything you eat or drink. Whether your blending it with salt to season your food or adding it to your smoothie in the morning you can be sure this tea brighten your day!

Matcha Green Tea Cupcakes with Matcha Buttercream Frosting


Beautiful green cupcakes that are so perfect for Spring parties or St Patrick's Day.



Matcha Green Tea Cupcakes

24 cupcake papers
1 cup (2 sticks) unsalted butter, room temp.
2 cups granulated sugar
2 large eggs
2 large egg yolks
3 cups all-purpose flour
2 tsp baking powder
1/8 tsp salt
1 cup milk
2 tbsp Matcha tea
4 recipes Matcha Buttercream Frosting

For Cupcakes:

Beat butter on high until soft, about 30 seconds. Add sugar. Beat on medium-high until light and fluffy, about 3 minutes. Add eggs plus egg yolks one at a time, beat for 30 seconds between each. Whisk together flour, baking powder, and salt in a bowl. Add to batter and mix to combine. Mix matcha in with the milk. Add to the batter and mix until combine. Scoop batter into prepared into cupcake papers. Bake for 22-25 minutes until a cake tester comes out clean.

For Sheetcake:

Prepare sheet pan by rubbing with butter, covering with parchment, rubbing with more butter, and dusting with flour. Continue with cupcake recipe. Pour into prepared 1/2 sheet pan and smooth flat. Bake for 22-25 minutes until a cake tester comes out clean.

Matcha Buttercream Frosting
A brilliant green frosting with something healthy to hide.

1 stick unsalted butter, room temp.
2 tbsp heavy cream
1 tbsp Matcha
3 cups powdered sugar, sifted

Mix matcha in with the cream to make a paste. Beat butter briefly, scrap bowl. Add the sifted powdered sugar and matcha paste. Beat until smooth.

Green Tea Smoothie

Matcha is a great way to get large quantities of green tea into your healthy diet. You can blend it into almost anything for flavor and health benefits.


Green Tea Smoothie

Serves 2

1 cup Yogurt
4 Tbsp Honey
1 cup ice cubes
2 Tsp Matcha or White Matcha

Blend ingredients together in a blender. Pour into a tall glass. Experiment with adding berries, bananas and fruit juice.

Assam Tarajulie

Tarajulie is a beautiful estate that lies in the shadows of the Himalayan mountains on the Bramaputra River plain. On a clear day the majestic mountains are visible on the northern horizon. The estate was purchased by the George Williamson Group of companies in the mid 1980’s and they have maintained the high standards that this estate was known for. The estate produces only orthodox manufactured tea. From time to time on the estate they contend with wild elephants and the occasional tiger. Not too many years ago intrusions by wild animals were not welcomed. Today however, these ‘visits’ are not seen in the same light. In fact Tarajulie has maintained some of the forested areas on the estate to provide cover for these endangered animals. 

You might ask - What gives Assam tea its special characteristics? The Assam valley is dominated by the Brahmaputra River - a large slowly meandering river which over millennia of spring and fall flooding has deposited a rich loam over the valley. The soil is a deep and sandy and the region suffers a very hot and steamy monsoon season, but equally important a relatively dry and cool winter. Perfect conditions for the Assam tea bush. This area is also susceptible to earthquakes which can make the ground swallow up whole tea bushes but this does not affect the unmistakable rich taste of Tarajulie FBOP.
